Featured Coffee of CLT Coffee Festival 2026: Red Sunset
Red Sunset, Andres Cardona’s Semi-Washed brilliance, is a result of his curiosity and desire to learn. This Castillo and Colombia varieties lot, grown at 1600 masl. has Sweet and Citrus flavor notes from an extended fermentation in cherry inside sealed tanks with an addition of coffee cherry juice from previous batches. This submerged anaerobic fermentation makes a balanced and homogeneous cup with an outstanding after taste. The first fermented in open tanks for 72 hours, later de-pulped and fermented again for 130 hrs, adding its own coffee juice and water. Initial drying phase in the sun for 6 days, followed by mechanical dryers until reaching 12% moisture content.
